That would interest me a lot more than somehow changing the display
color. Given that people have been able to fabricate entire tubes in
their own shop/lab now, it seems like it would only be a matter of time
before someone figures out how to do the same with Nixie tubes.
It has been done. A friend of mine on the lasers list built one:

There have been more complex examples than this, and while this isn't
strictly a Nixie tube, it's moving in that direction. I know I've seen
complete homebrew Nixie tubes online in the past few years.
