So basically, it isn't directly to disk, but it is
only about 6 steps to
a finished product, and all the steps are fairly simple so a quick cheat
sheet of directions might be enough for all but the full fledged
technophobes.
The full version of Adobe Acrobat definitly gets my vote. I think V6 might
even have some hooks for getting the documents OCR'd, but I can't remember
(I'm still at V5).
