You must be finding different kits than I see around here. Most of them

microcontroller with no source code, so all you can learn by building the
kit is soldering skills.
I've built several kits from Vince Briel and Bob Armstrong over the
past 15 years - I've got source, schematics, GAL equations, and I
usually buy bare boards and source my own components and burn my own
programmable devices (ROMs, MCUs, and logic devices) for them.
