I've never used one, but as I pursue terminals I notice that the IBM
terminals with the coax style connector always seem to mention AS/400
machines in conjunction with the terminals.
Was this a typical configuration for things like the 3279, 3180, etc.

Nope. The coax terminals speak EBCDIC and are usually connected to
mainframes.
The terminals for AS/400 had Twinax connectors and (if memory serves)
speak ASCII.
