Try looking for "liquid rheostat" or "water rheostat". They're
still
used for starting large motors and have power ratings of 300KW to 1MW
as far as I can tell.
I've got a plating manual from the 1990s that describes using a water
rheostat to regulate plating current.
If you think about it, they make a lot of sense--you can use a pump
to move the liquid around for cooling, instead of using a liqud to
transfer heat from a solid resistance element.
