The convention for the 20-odd years I've been doing online discussions is this:
Underscores mean _underlined_ text.
Forward slashes mean /italicized/ text.
Asterisks mean *bold* text.
If you use (for example) the Mozilla Thunderbird email client, it
displays text marked this way in bold, underline or italics, as
appropriate. So does the Ameol reader for the British CIX online
service.
