Probably not relevant to recreating a specific
keyboard, but these guys
will do custom keycaps that fit Cherry switches:

The price adds up but it's amazingly cool that this stuff is available...
Cherry made a wide range of keyswitches over the years.... Alas these
keycaps do not fit the Cherry switch I need a cap for -- the type used in
the HP9830. Oh well...
