After looking at my copy of the D+7A schematic, you probably could get
away with using joysticks pots which are higher in value, say 10Kohms.
Looking at the 4051 mux datasheet, the input current required is
minuscule, measured in the microamps, which should make it still
possible to use joysticks with a little more resistance.
