The "Sent from my iPad" thing is the default
signature in the iOS mail
client. Most people don't know enough to change it, even though it
takes like 20 seconds. In fact, I'd wager most people don't even know
they're sending it.
I've changed mine to "Sent from my Motorola PT550 Cellular Telephone".
People seems to like it.
