Someday I'll have to get a proper copy stand, but so far I've been quite
pleased with my Manfrotto 055XPROB tripod, with which you can fully extend
the center vertical column then flip it to extend out horizontally instead,
to take photographs looking down at items on a table. Sometimes that's
more convenient than the method you describe, though it is more sensitive
to vibration. I'm using a ball head, but I'd like to get a tilt head, and
am particularly intrigued by the Manfrotto MHXPRO3 head.
