One of the best tools that I know of to do this is IDA Pro. It'll
graph and allow you to step and debug 68K code, in addition to
disassembling it.
The drawback is that it's expensive--about USD$500 for a single
license. For a one-off, it's probably not worth the cost, but if you
do this kind of thing for a living, it pays for itself very quickly.
