"Virtual ][" should do what you're after. Check here:

I use it all the time, it's a MAGNIFICENT emulator. It emulates several
kinds of printers, so you can make PDF images of printed pages, or you
can use the "text only" printer -- it just prints ASCII files, which is
what you want.
