Yes, I suspect that _engineers_ (or scientists) would be flexible, and
would realise that somebody who was happy writing mathematical programs
is not going to have much problem picking up Excel (say).
The problem is that the Resume' (CV, whatever you want to call it) is not
going to get to the engineers. The HR department acts as a
preprocessor, and at least over here they will happilly filter out all
candidates who don't meet the strict list of criteria.

One of the nifty things about working for small outfits is they
typically don't have *that* sort of HR person, if any at all. There are
many other benefits as well, IMHO. Yes, there are some disadvantages as
well, but neither of my two experiences with a "biggy" was very pleasant.
