and get a second degree: Electrical & Computer Engineering. Now, look

Of course not. I was just thinking that having the structured
presentation of the material and the access to equipment/projects that I
would not otherwise have quick access to would be good for learning.
I want to target myself career-wise towards embedded software engineering.
I was recently told that in the embedded industry, you can't be solely a
software engineer; you have to know how to hack the hardware too. This
move will make me more marketable that way.
