The only difference is that you can't remove the key tops like you could
with an original Model M.
I don't know about other models, but the keycaps on the 104-key Unicomp
customizer not only come off, but are interchangeable with a real Model M.
The only Unicomp keyboard I have you cannot take just the cap off. The
whole key/post comes out.
