Depends on how you prove it. The universe is too big to prove it by
exhaustive search. But it may be possible to prove that tapping zero point
energy is not allowed by current theories of physics (i.e., the Standard
Model). This would be a useful result. And if it were proven that it
is not allowed by theory, but someone ever manages to do it in practice,
that would help with the development of a better theory.

There's an absolutely insane amount of zero-point energy. How much of it
can actually be tapped (if any) is another question.
