I don't know of any way of solviing multiple
solution games without
back tracking. Is there such a way?

There probably is, but I think all such ways are equivalent, in the
theory-of-computation sense, to backtracking, at least if you want all
solutions rather than being satisfied with just one.
I wonder how many unique puzzles there are?
Interesting question.
I'm not sure how I'd go about computing that number. "Lots", I'm
sure
of that much, but just how many strikes me as difficult to work out.
