My wife has been using various version of Debian and Ubuntu over the
years - not that _that_ mattered to her, since for her pretty much
nothing changed: WindowMaker, Mozilla/Firefox, Sylpheed/Claws,
OpenOffice was available on all.
Of course, her machine is just a simple client - $HOME comes via NFS,
auth via NIS and various other services (proxy, mailserver, DNS, ...)
just exist somewhere on the home network.
But I suggest you take a look at the current Ubuntu version, it should
support a reasonable range of hardware and be simple enough to install
(and maintain) for average non-Unix-wizard users.
