There are several YouTube videos on hand-soldering QFPs and other
packages. The best approach seems to be a wide tip on your iron and
some desoldering braid and a very light touch. At least that's what
works for me.
There are also videos for hand rework of BGAs, including reballing.
There's an amazing one of a guy replacing a VIA southbridge chip
using what appears to be a butane pencil torch....
