wouldn't it be simpler to replace the MFM controller chip(s)
with a circuit that simply accessed an IDE or SCSI disk instead ?
Well yeah. You could probably emulate the MFM controller *entirely*
with a modern microcontroller, and stick an SD card in. There can't be
*that* much involved in pretending to be a hard disk controller chip...
