Unless it has a Ferroresonant transformer...then you *need* 3-phase.
The other thing to note is that 3-phase was used to keep the wiring
"reasonable". Wiring up a 3-phase 24A circuit (and cabling) is much
easier than a single phase 75A circuit (although I've run a 3-phase 75A
branch in my shop...100' of #3 wire (4 conductors) is *not* fun).
