It's spelled out in fair detail in the Pro 300 Technical Manual, on Bitsavers.  Look at volume 1, page 383 (8-5).  There are also VT201 engineering drawings on Bitsavers.

One complication is that you have to supply +12v power; the VT201 is powered from the system box.  The video is standard monochrome composite video "compatible with EIA RS170 standards".  So yes, that should work for what you want to do.
